Recipes

I like to prepare dinner in the morning or during nap time if at all possible. It just seems like Samuel plays by himself much better in the morning. After his nap he tends to be a little more needy. So the less preparation I have the better. That's why I love summer grilling time! Here is what we're having tonight. Mike says it tastes like steak. Yum!

Grilled Pork Chops

1/4 lemon juice
2 T. oil
1/2 t. salt
1/4 t. pepper
1/4 t. ground oregano

Combine all ingredients in a large ziploc bag or shallow dish. Add 4-6 pork chops. Marinate in the refrigerator for 2 hours or overnight. Turn the pork chops several times while marinating

Remove pork chops from marinade and bring the marinade to a boil in a small saucepan. Grill the pork chops on medium high basting with marinade on each side. (Sometimes I skip the basting part but it does add some extra flavor.)

Serve with a salad, fruit and baked potato and you have an inexpensive, delicious summer supper!

Crepes with blueberry compote

Zucchini sticks (We made these plain without marinara to have with our hamburgers. They were a huge hit with Samuel.)

Whole Wheat pancakes
( I added one smashed banana and sprinkled walnuts on the adult pancakes. They were delicious and we popped the leftovers in the toaster for a quick weekday breakfast!)

No pictures today. We went to the unit picnic at the marina at noon but I forgot my camera. Samuel shook hands with the General and then we left a bit early to come home for nap time. Mike had to go back to the office for a meeting so we didn't miss much. Pics to come, I promise!
