First, here is a new picture we took tonight. I will be 27 weeks on Monday which means I have only 3 more days of my 2nd trimester. Everything is going well. This afternoon I sat down to grade some papers and I looked down at my feet to find that they were squeezing over the tops of my shoes. It reminded me of a certain high school English teacher who will remain nameless. :) Yikes! At least I have a reason for large puffy feet and cankles that will hopefully go away in a few months.
Some mothers at school had a luncheon for us a couple of weeks ago and this is a soup recipe that we had. It is yummy! I would suggest cutting it in half unless you're taking it somewhere or have a large family. It makes a lot.
Broccoli Noodle Soup
2 T. butter
3/4 cup chopped onion
6 cups water
8 chicken boullion cubes
2 8oz. packages frozen egg noodles
1/2 t. salt
1/4 t. garlic powder
2 10 oz. packages frozen chopped broccoli
Saute onion in butter. Add next 6 ingredients. Cook for thirty minutes until noodles are done.
Add:
1 lb. velveeta cheese, cubed
2-3 cups milk
Stir and heat through. I used the 2% velveeta and skim milk and it was still very good.
